Nonna Grazia's Tiramisu recipe

Every time Nonna Grazia (my mother in law) visits us from Italy, I gain a few pounds. Among her specialties is the Tiramisu. I documented the steps she took to make this magic, yet simple dessert (recipe is for 4 people – total time ~15 mins).

Ingredients
- 4 yolks
- 8 oz. Mascarpone cheese
- Sugar
- 1 cup of coffee
- 10-12 Savoiardi cookies
- Milk
- Powder cocoa (optional)

Start by making the coffee. She usually uses a traditional Italian Espresso coffee machine, which makes the coffee in about 4 minutes. You can even use some ready coffee, since there are many brands and kinds available at the superstore.

Meanwhile, beat the yolks with 4 tbs of sugar until creamy (1-2 minutes). Use an electrical handmixer which makes the job faster and the cream smoother. Add the mascarpone cheese and beat for an additional minute until the cream becomes very smooth.

Pour the coffee in a bowl and add some milk and sugar (or nothing at all if you like the coffee strong). Dip the Savoirdi cookies quickly on both sides to avoid that they become too moistured and eventually break.

Lay them on the bottom of a flat serving dish (a Pyrex is ideal), cover them with the cream and, right before serving, spread the top with some powder cocoa. Cover and chill for a couple of hours.

    • prova 300 gr di farina, 150 burro fuso, 1 tuorlo, 1 uovo intero, scorza di limone grattugiato 1/2 bustina di lievito, 100 gr di zucchero.
      Con questa fai la frolla, la stendi e la bucherelli.(tieni da parte un pò)
      In un pentolino fai la crema con 250 ml di latte, 2 tuorli, 50 gr di zucchero, 15 gr di amido di mais e 15 gr di amido di riso.La fai cuocere con una buccia di limone. La versi nella frolla gli sbricioli sopra la frolla che hai messo da parte e aggiungi i pinoli. Spero ti piaccia un saluto…

    Caro Paolo,

    I tried the recipe tonight and I got little success.

    However, on the ladyfingers package (Vincenzo brand) there was a tiramisu recipe that seemed identical. The exception is that they also mention adding the beaten egg whites after the cheese is beaten…

    Ciao, se mi posso permettere vorrei darti un consiglio per ogni 250 gr. di mascarpone servono 2 uova. Poi i tuorli vanno lavorati con lo zucchero semolato, il mascarpome e gli albumi montati a neve. Prova a sostituire i savoiardi con i pavesini e il caffè deve essere molto forte, magari puoi diluirlo con qualche cucchiaio di latte…La panna è facoltativa e va usata per coprire l’ultimo strato!!! io invece non riesco a fare i brownies…non ho mai trovato la giusta ricetta!!! un saluto…
